Pumpkin Cheesecake Recipe, Pumpkin Muffins Recipe
On Thanksgiving Day, many of us put together the same meal and of course it’s always tasty, turkey, gravy, mashed potatoes, yum. This year, I thought to mix things up a bit with desert. We went on a search for some delicious pumpkin recipes. How about pumpkin cheesecake, pumpkin muffins or chocolate chip pumpkin bread? Have a favorite Thanksgiving side dish or desert you’d like to share?
Pumpkin Cheesecake
- Crust:
- 2 cups of graham cracker crumbs
- 1/4 cup sugar
- 6 tablespoons melted margarine or butter
Mix ingredients, and press into a 9-inch springform pan.
- Ingredients
- 2 (8 ounce) packages cream cheese.
- 3/4 cup white sugar
- 1 (15 ounce) can pumpkin puree
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 2 eggs
- 1/4 teaspoon salt

Preheat oven to 350 degrees. Beat together cream cheese, sugar, adding in pumpkin, spices and salt. Beat in eggs one at a time. Continue beating until creamy. Pour the batter evenly into the graham cracker crust. Bake at 350 degrees for 50 minutes. Insert a knife and if it comes out clean, it is done. Let cool and add whipped cream if desired.
Pumpkin Muffins Quick Recipe
- 1 box of spice cake mix
- 1 16 ounce can of pumpkin

In a Hurry, make pumpkin muffins with just two ingredients. Mix together ingredients, pour in muffin pan and bake for 18-20 minutes at 350 degrees (always preheat). Makes about 24 pumpkin muffins.
