Quick and Easy Bison Stroganoff Recipe
Yum, tonight I made a family favorite for dinner, changing out hamburger for bison in my Hamburger Stroganoff. Took all of 30 minutes to make a delicious homemade meal and my family felt special knowing Mom made it. I must admit we eat way too much take out pizza. Here’s my bison recipe:
Bison Stroganoff with Bow Tie Pasta (Farfalle)
Ingredients:
1 lb. of ground bison
8 oz. sour cream
1 can of cream of chicken/mushroom soup
1 box of bow tie pasta (farfalle)
Yep, that’s it, four ingredients and it’s yummy. First, heat your water until it boils and drop in your pasta. Next, brown the bison. We chose bison because it’s better for you than ground beef.
Did you know bison has less fat than chicken, more protein and less calories? I felt like I was actually doing something good for my family by trading out the hamburger (although I usually buy lean) for the bison.
Ok, so the next step is to add the sour cream and cream of chicken/mushroom soup and simmer for 15-20 minutes. Cook until you no longer taste the sour cream flavor.
My best friend and her family love the taste of sour cream, so they don’t cook the sauce as long as I do. I’ve seen this recipe where it says it takes just 15 minutes for this meal, which is do-able, if you use egg noodles and don’t cook the sauce as long. My kids like the bow tie pasta better. I think it’s because we’ve only ever had them at Olive Garden and they feel special when we have them in a meal at home.
Another reason our kids love the recipe is because the itty bitty chunks of mushroom from the cream of mushroom soup are barely noticeable and the delicious flavor from the mushrooms is still in the dish.
The last step is to drain your pasta and serve the sauce over the pasta. Serves four people. I double mine as I have a large family and my kids like me to make a little extra so they can have it to warm up the next day. Add steamed brocolli, if you want to add a veggie to balance out the meal.
