Easy Grill Chicken Dinner Recipe

Have you read about women taking over the backyard grill yet? Perfect Grilling Tips.  It’s a wonderful place to start before you cook up this fabulous (and easy!) grilled chicken dinner. Imagine moist and tender grilled honey-lime chicken strips paired up with smoky garlic bread and tangy island vegetables. Let the grilling begin!

Let’s start with the island veggies. Cut up any vegetables you have on hand. I enjoy grilling squash, zucchini and sweet red peppers. In a bowel combine a cup of orange juice, some shaved fresh ginger, crushed garlic, red peppers if desired, lemon or lime juice and a few dashes of soy sauce. Pour the marinade in a casserole dish and let your vegetables sit in the marinade for at least 30 minutes.

Chicken time! Cut boneless chicken breasts in to strips. Coat them in a mixture of 2 cups flour, 1 tablespoon garlic powder and 2 teaspoons of kosher or sea salt. Let them sit for 20 minutes. In the meantime you can prepare your garlic bread by cutting Italian bread length-wise and spreading it with butter. Top the butter with crushed garlic or garlic powder. Place the bread on foil and move on to the chicken.

Melt a stick of butter in a medium sized bowl. While it is hot, stir in ¼ cup of honey. Squeeze in ½ a lime and whisk. Coat your chicken pieces completely with the butter mixture. If you like sweet and spicy, throw in some pepper flakes too. Now, get ready to grill!

Start with your vegetables. They can go on a fairly hot side of the grill. Put them directly on the grate and cover to start the cooking process. If the coals feel extremely hot you can always wrap your vegetables in a foil pocket and keep them at the edge of the grill.

In about seven minutes it is time to put on the chicken. Larger pieces can go over the coals while smaller ones should stay to the side. The garlic bread should be placed on top of the foil, crust side down. If your vegetables look like they need turning, feel free to do so.

Cover and let cook for about five to seven minutes. Turn the chicken and move around to hotter or cooler spots depending on how each piece is cooking. Once the vegetables and chicken are done, take the bread off of the foil and place it face down on the grill in order to capture some beautiful grill marks. Put everything on a tray and bring it to the kitchen.

This is an easy, inexpensive meal that will impress even the greatest of grillers. The chicken is tender, sweet and is a perfect compliment to the tangy citrusy vegetables and spicy garlic bread. Happy grilling, ladies!
